1 ️ ⃣ Whip butter and sugar
In a large bowl, beat together the butter and rock sugar until smooth and creamy.
2 ️ ⃣ Add eggs and vanilla
Add eggs and vanilla extract and beat well until well incorporated.
3 ️ ⃣ Add flour and salt
Gradually add flour and a pinch of salt. Mix until an even dough is formed (do not overmix).
4 ️ ⃣ Refrigerated dough
Divide the dough into two, wrap it in plastic wrap and chill in the refrigerator for 30 minutes.

Roll out the dough to a thickness of 0.5 cm on a floured surface.
Cut with a mold and put a little candy or nutella between two cookies if you want to make it stuffed.

Place the cookies in a tray lined with greaseproof paper and bake at 170 °C for 10-12 minutes until the edges of the cookies are slightly brown.
Place on a grid rack to cool.

Once cool, garnish with royal icing, fondant, or fill with jam, ganache, or jam.
