Step 1: Melt the dark chocolate.

-Start by melting the dark chocolate in a heatproof bowl in boiling water or microwave. Once melted, let cool slightly.

 

Step 2: Beat the egg whites

-In a clean bowl, beat the egg whites with the sugar with an electric mixer until hard peaks form. This will bring a light texture to the mousse.

 

Step 3: Beat the cream

-In a separate bowl, beat the cream with the vanilla extract until a soft foam forms. Be careful not to overkill it as it should remain smooth and delicate.

 

Step 4: Add dark chocolate

-Gently pour the cooled dark chocolate into the egg whites, taking care not to deflate the mixture. Once well mixed, add the whipped cream again until well incorporated.

 

Step 5: Repeat adding other chocolate

-Repeat the mixing process of milk chocolate and white chocolate to make different layers of mousse respectively. Make sure to gently stir each layer to keep it light.

 

Step 6: Mousse layer

-Start layering the mousse in the cake tin: pour dark chocolate mousse first, then milk chocolate mousse, and finally pour white chocolate mousse on top.

 

Step 7: Refrigerate

-Chill the cake in the refrigerator for at least 4 hours to allow the layers to set completely before serving.

📝 Ingredients:

 

1 cup unsalted butter, softened

1/2 cup granulated sugar

4 large eggs

1 tablespoon vanilla extract

3 cups medium-gluten flour

1 tablespoon baking powder

1/2 tsp salt

1 cup milk

2 tablespoons rose water

Pink food coloring (optional)

2 cups whipped cream

Fresh rose petals for decoration

 

Stuffing

1 cup mascarpone cheese

1/2 cup whipped cream

1/4 cup granulated sugar

1 tablespoon rose water

Pink food coloring (optional)

Step 1: Prepare the cake

-Preheat oven to 175 °C. Grease and flour three 20 cm round cake tins.

-In a large bowl, combine the softened butter with the caster sugar until the mixture is light and fluffy.

-Add eggs one by one, beat well after each addition, and then add vanilla extract.

 

Step 2: Mix the dry ingredients

-In a separate bowl combine flour, baking powder and salt.

-Gradually add the dry ingredients to the butter mixture, alternating with the milk. Start with and end with dry ingredients. Add rose water and a few drops of pink food coloring if desired.

 

Step 3: Bake the cake

-Divide the batter evenly into the prepared cake tin. Bake for 25-30 minutes or until the cake is removed by inserting a toothpick into the center of the cake.

-Allow the cake to cool in the tin for 10 minutes, then transfer to a grid rack to cool completely.

 

Step 4: Prepare the filling

-In a medium bowl, add the mascarpone cheese, whipped cream, sugar, rose water, and a few drops of pink food coloring (if desired). Mix until smooth and well combined.

 

Step 5: Assemble the cake

-Place a layer of cake on a dinner plate and spread a third of the filling on top. The remaining layers were repeated.

-Whip the whipped cream in a large bowl until it begins to thicken. Add the rock sugar and continue beating until a hard peak is formed.

-2 cups chocolate chip cookies.

-1/2 cup melted butter

-2 cups cream cheese, room temperature

-1 cup rock sugar

-2 cups whipped cream

-1 cup chocolate ganache

-1 cup shredded coconut

-1 cup chopped pecans

-1/2 cup caramel sauce

-1/2 cup chocolate chips

-1/4 cup pecan nuts half sliced

-1/4 cup whipped cream for garnish

 

🔔 Manufacturing instructions:

 

Step 1: Prepare the base material.

-In a medium bowl, combine the chocolate chip cookie crumbles with the melted butter. Form the bottom layer by firmly pressing the mixture into the bottom of a 23 cm springform pan. Place in the refrigerator for 30 minutes to set.

 

Step 2: Prepare the cheesecake filling

-In a large bowl, beat the cream cheese and rock sugar until the mixture is smooth and creamy. In a separate bowl, beat the whipped cream until firm peaks form. Gently pour the whipped cream into the cream cheese mixture until well combined.

 

Step 3: Assemble the cheesecake

-Spread half of the cream cheese mixture evenly onto the refrigerated base. Drizzle with half of the chocolate ganache, then sprinkle with half of the shredded coconut and chopped pecans. Spread the remaining cream cheese mixture over the top and coat with the remaining chocolate sauce. Finish with the remaining shredded coconut and pecans on top. Drizzle the caramel sauce over the cheesecake.

 

Step 4: Garnish and refrigerate

-Garnish the cheesecake with chocolate shavings, pecan halves and a spoonful of whipped cream. Chill the cheesecake in the refrigerator for at least 4 hours until fully set.
