Ingredients
500 g cottage cheese
2 cups sugar
1 piece of room temperature butter (about 90 g
6 eggs, yolk and white separate
2 tablespoons baking powder
1 cup wheat flour

Preparation:
1 ️ ⃣ Preheat oven to 180 °C.
2 ️ ⃣ Whip the bread base:
In a bowl, beat the sugar, ricotta and butter until creamy.
Add the egg yolks one at a time, beating well after each addition.
3 ️ ⃣ Add dry ingredients:
In a separate bowl, mix the flour with the baking powder.
Add this mixture to the previous mixture and stir until thoroughly combined.
4 ️ ⃣ Beat egg whites:
In a separate bowl beat egg whites until firm foam forms.
Pour the egg whites into the mixture to prevent air loss in the egg whites.
5 ️ ⃣ Add nuts:
Add raisins and nuts and stir gently.
6 ️ ⃣ Prepare the mold:
Grease a baking sheet with butter and sprinkle with breadcrumbs to prevent bread from sticking.
Pour the mixture into the jar.
7 ️ ⃣ Baking:
Bake for about 1 hour, or until removed clean with a toothpick inserted through the middle.
8 ️ ⃣ Demoulding after cooling:
Cool and demould.

Step 1: Prepare the mixture
-Preheat oven to 180 °C and grease loaf tin. In a large bowl combine flour, sugar, baking powder, baking soda, cinnamon powder, and salt.
Step 2: Mix the wet ingredients
-In a separate bowl beat the eggs and add the milk, vegetable oil and vanilla extract. Mix thoroughly until all ingredients are well combined.
Step 3: Mix the mixture
-Add the wet mixture to the dry mixture and stir gently until thoroughly combined. Don’t over stir, some lumps are normal.
Step 4: Bake
-Pour the mixture into the prepared bread tin and smooth the surface. Place in the preheated oven and bake for 50-60 minutes, or until removed clean by inserting a toothpick into the center.
Step 5: Cool and serve
-Once baked, remove the bread from the oven and let it cool in the baking dish for 10 minutes. Then demold and place on a grid rack to cool completely before slicing.

100 g sugar
50 g natural yogurt
50 ml vegetable oil
75 grams of flour

300 g (1 lb) of frozen berries
10 g (1 tablespoon) cornstarch
200 ml whipped cream
White cream

Preparation
1. Sponge cake
Preheat oven to 180 °C and grease a springform cake tin about 22 cm in diameter.
Beat eggs and sugar in a bowl until mixture is bubbly and lightly colored.
Add yogurt and oil and stir until well combined.
Add sifted flour, baking powder, and vanilla extract. Mix until a homogeneous dough forms.
Pour the batter into the prepared pan and bake for 25-30 minutes until removed with a toothpick inserted.
Place the cake in a baking tin to cool.
2. Fruit layer
Place the berries, cornstarch, and heavy cream in the pan. Cook over medium heat, stirring constantly, until the stock thickens and reaches boiling point.
Remove from heat and blend the mixture to a smooth mouthfeel.
Pour the fruit mixture over the cooled sponge cake and let rest until completely cooled.
3. White cream
In a bowl, beat the heavy cream with an electric mixer until it begins to thicken.
Add a small bag of whipped cream powder and continue to beat until firm.
Melt the white chocolate in an electric kettle, adjust to the temperature and add to the cream mixture, stirring gently to prevent the chocolate from softening.
4. Assembly:
Once the fruit layer has cooled, spread the white cream evenly over the top.
Smooth the surface with a spatula and chill in the refrigerator for at least 4 hours, preferably overnight.
