Chicken Enmoradas
Ingredients:
• 12 tortillas
• 1 pound cooked shredded chicken (chicken breast)
• 2 cups poblano moradas (you can use pre-made moradas or homemade)
• 1 cup fresh shredded cheese, cortia, or mozzarella
• 1/2 cup sour cream (or Mexican cream)
• 1/4 cup roasted sesame seeds (optional, for garnish)
• 1/2 red or white onion, thinly sliced or finely chopped (for garnish)
• Vegetable oil (for light frying corn tortillas)
• Proper amount of salt

Preparation method:
1. Prepare the moradas: Heat the poblano moradas in a saucepan. If paste, dilute it (usually with chicken broth or water) according to package directions until it has a smooth, thick consistency. Keep the temperature of the mole sauce.
2. Prepare the tortillas: Heat enough vegetable oil in a skillet over medium-high heat. Stir-fry each tortilla in hot oil for a few seconds (to soften it so it doesn’t break when rolled). Do not fry until crispy. Place the tortillas on a kitchen paper towel to suck off any excess grease.
• Another option: If you don’t want to fry the tortillas, you can also heat them on a dry baking pan or skillet.
3. Fill enchiladas with hot sauce: Fill each tortilla with shredded chicken and add a little cheese if desired. Roll up the tortillas and place on oven-specific plates or separate plates.
4. Drizzle moore sauce: Drizzle generous amounts of hot moore sauce over the enchiladas with hot sauce, making sure all tortillas are coated in sauce.
5. Bake (optional): If you use cheese for the filling, or want to grill cheese on top, sprinkle fresh cheese over the enchiladas and bake at 180 °C/350 ° F for 10-15 minutes, or until the cheese is melted and the enchiladas are piping hot. This step is not required if consumed immediately.
6. Serve and garnish: Remove the enchiladas from the oven. To serve, garnish with a pinch of sour cream, diced or sliced onions, and toasted sesame seeds.

Ingredients
Dough (if you don’t have a favorite dough, you can choose a simple dough)
• 250 g high-gluten flour (or all-purpose flour)
• 150 ml warm water
• 5 g fresh baker’s yeast (or 2 g dry baker’s yeast)
• 1 teaspoon sugar
• 1/2 teaspoon salt
• 1 tablespoon extra virgin olive oil
Tomato sauce
• 200 g tomato puree or tomato paste
• 1 small clove of garlic (chopped or crushed)
• 1/2 tsp dried oregano
• Modest amount of salt and pepper
• A little olive oil

Ingredients
• 150-200 g crumbled mozzarella cheese (preferably low-moisture, good for pizza)
• 100-150 g cooked ham (jamon or York), diced or strips
• 100-150 g fresh or canned pineapple (drained and patted dry with a kitchen paper towel), cut into bite-sized pieces
• Optional: A little dried chopped oregano for sprinkling on the dough
Preparation method
1. Prepare pizza dough (if homemade)
1. In a small bowl, combine the warm water, sugar and yeast. Let sit for 5-10 minutes until the yeast is activated and bubbles on the surface.
2. In a large bowl, combine flour and salt. Make a hole in the middle and pour in the yeast mixture and olive oil.
3. Mix with a wooden spoon or hand until all ingredients are well combined.
4. Place the dough on a lightly floured chopping board and knead for 8-10 minutes until smooth and elastic.
5. Form the dough into a ball, brush the same bowl with a little oil, cover with plastic wrap or damp cloth, and let it sit in a warm place for 1-2 hours, or until it doubles in size.
2. Prepare tomato sauce
1. In a small pan, pour a little olive oil and heat it. Gently stir fry the minced garlic until fragrant (do not fry until browned).
2. Add the crushed tomatoes, oregano, salt and pepper.
3. Simmer on low heat for 10-15 minutes, stirring occasionally, until the sauce thickens slightly. Allow to cool.
3. Preheat oven and roll out dough
1. Preheat the oven to maximum temperature, typically 220-250 °C (425-475 ° F). If you have a pizza stone, place it in the oven while the oven is preheating.
2. After the dough is fermented, gently vent it with your fist.
3. On a lightly floured countertop (or baking paper), roll out the dough to the desired thickness and shape (round or rectangular). You can make one large pizza or you can make two separate pizzas.
4. Assemble the pizza
1. Place the rolled dough on a baking sheet (or on baking paper if using a baking sheet).
2. Spread a layer of tomato paste evenly, leaving a small edge for the base of the cake.
3. Sprinkle with a layer of grated mozzarella cheese.
4. Spread the cooked ham and pineapple pieces evenly on the cheese.
5. Add a little dried oregano if desired.
5. Bake pizza
1. Bake the pizza in the preheated oven for 10-15 minutes, or until the bottom is golden brown and the edges are crispy, and the cheese is bubbly and slightly browned. Times may vary from oven to oven.
6. Serve
1. Remove the pizza from the oven and let it rest for a minute before cutting into slices. Enjoy yourself 🫶
