Step 1: Prepare the dough

-In a large bowl, dissolve the yeast in the warm milk. Add egg yolks, whole eggs, sugar, and melted butter. Mix well.

-Gradually add flour, salt, lemon zest, orange zest and vanilla extract. Knead the mixture into a smooth, elastic dough.

 

Step 2: Add the fruit

-Add candied fruit and sultan fruit to the dough. Knead again so that the fruit is evenly distributed.

 

Step 3: First awakening

-Place the dough in an oiled bowl, cover with a damp cloth, and let it sit in a warm place for about 2 hours, or until the dough has expanded to double its size.

 

Step 4: Shaping

-Once the dough is awake, gently degas it and knead it into a ball. Place the dough in a paper pie mold or an oiled tall pan.

 

Step 5: Secondary proofing

-Cover the pan with a cloth and let the dough proof again for 1 hour until the dough rises over the edge of the pan.

 

Step 6: Bake

-Preheat oven to 180 °C. Bake the pie for 40-50 minutes until golden brown and use a toothpick to remove the pie.

 

Step 7: Cool and Serve

-Remove the filled cake from the oven and cool in the pan for about 10 minutes. Then remove to a grid rack to cool completely before slicing.

Step 2: Make pastry cream

-Heating milk: Heat milk and lemon zest (if used) in a saucepan until boiling. Out of the fire.

-Mix the egg yolks and sugar: In a bowl, beat the egg yolks and sugar together until the mixture is light. Add the cornstarch and mix well.

-Boil the mixture: Pour the warm milk into the egg yolk mixture, stirring constantly. Pour the mixture back into the pan over medium heat, stirring until thick. Remove from heat and stir in vanilla extract. Cool.

 

Step 3: Shape and fry the donuts

-Molding donuts: Once the dough is awake, roll it out on a floured surface and use a donut cutter to cut out circles. Allow the donuts to rest for 30 minutes.

-Frying: Heat the oil in an oil pan. Fry donuts in hot oil until golden brown on both sides. Remove and place on oil absorbent paper.

250 ml full cream

250 ml whole milk

-Cut the peaches into pieces and put them in a blender. Add the sugar and lemon juice. Stir until pureed.

-Cover the bowl with plastic wrap and freeze in the freezer for at least 2 hours to allow the mixture to cool.

-Pour the cooled mixture into the ice cream maker and churn it according to the manufacturer’s instructions. If you don’t have an ice cream maker, pour the mixture into an airtight container and place in the freezer to freeze.
