Ingredients

 

-2 cups plain yogurt

-1 cup sugar

-1/2 cup vegetable oil

-3 large eggs

-1 cup wheat flour

Description

 

1. Preheat oven to 180 °C (350 ° F) and grease cake tin.

2. In a large bowl, combine yogurt, sugar and vegetable oil until well incorporated.

3. Add eggs one by one, stirring well after each addition.

4. In a separate bowl, mix together the flour, baking powder, salt and lemon zest (if used).

5. Add the flour mixture to the bowl of the yogurt mixture and gently stir until thoroughly combined, but do not over-stir.

6. Pour the batter into the prepared pan and use a spatula to smooth the surface.

7. Bake for 30-35 minutes until there is no problem inserting it through the middle with a toothpick.

8. Let the cake cool in the baking tin for 10 minutes, then transfer to a grid rack to cool completely.

9. After cooling, if desired, sprinkle with rock sugar before serving.
