Cheesecake with cold coffee

Ingredients

Preparation
1. Mash the cookies and stir in the melted butter. Press the mixture into the bottom of a springform pan. Place in the fridge to chill while preparing the filling.
2. Soak gelatin in cold water and let it rest for 5 minutes. Then microwave for a few seconds or dissolve in the bathtub.
3. Beat cream cheese with rock sugar until smooth. Add the coffee powder and vanilla extract.
4. Beat the cream until it is firm and mix evenly with the cream cheese.
5. Add the melted gelatin and stir with an immersion motion until blended.
6. Pour in the biscuit mixture and smooth the surface. Place in the refrigerator for at least 4 hours until set.
7. Garnish with cocoa powder, chocolate chips or coffee beans before serving.

Preparation method
Step 1: Prepare the pudding
-Preheat oven to 180 °C. Grease a baking sheet about 23 x 33 cm. In a large bowl, mix together the chopped croutons, chopped apples, eggs, vanilla yogurt, milk, caster sugar, 1 teaspoon powdered cinnamon, nutmeg, and sultan fruit (if used). Mix well until all ingredients are well combined.
Step 2: Bake
-Pour the mixture into the prepared baking dish and sprinkle the remaining teaspoon of powdered cinnamon on top. Bake in the preheated oven for 45-50 minutes until firm in the center and remove with a knife.
Step 3: Prepare the caramel sauce
-While baking the pudding, prepare the caramel sauce. In a medium stockpot, melt the butter over medium heat. Add the whipped cream and brown sugar, stirring constantly as you cook until the mixture is smooth and well combined. Bring to a boil and cook for another 1-2 minutes.
Step 4: Serve
-When the pudding is ready, remove it from the oven, let it cool slightly and cut into small pieces. Each pudding should be served warm and drizzled with caramel sauce on top.
